At what level do you intend to teach?

You will need a single-subject teaching credential for high school, or a CA community college credential.

If planning to teach Nutrition/Dietetics to elementary/middle school, you will require a multiple-subject teaching credential.

To obtain the credentials you will need to be an RD (Registered Dietician).

To become an RD, you need a BA in Nutrition/Dietetics. After the BA, you must complete an approved Internship before you can take the exam for Registered Dietician.

Dietetics Internships in CA are scarce. I know Cal Poly offers one, but only to like 10 grads/year and obviously that would be very competitive (especially if you’re not a Cal Poly student)

To be a reg’d nurse, you only need to attend a community college. However, by the time you finish all the prerequisites, you may as well have gotten the BA in Nutrition/Dietetics! However, the Registered Nurse does offer significantly higher pay (about $20k/yr here in California) over the RD.
